1) Every year when the Fall season approaches, I get excited to alter my regular diet and eat Fall themed things to really feel the spirit. I love to try the seasonal drinks from Starbucks, find the Halloween themed candy at the gas stations, and overall try Fall snacks that are fun to make! Personally, I enjoy cooking and watching people cook on television or in person. When I prepare new recipes, I always keep in mind to always follow all of the instructions and believe in yourself. Following directions and being passionate is important with cooking because it affects your results. 

 

Pumpkin Spice Cupcakes- ¾ cup of butter, 3 eggs, 1 can of pumpkin, 2 ⅓ cups of flour, 1 tablespoon of pumpkin pie spice, 1 teaspoon of cinnamon, ½ teaspoon of ground ginger, 1 cup of buttermilk

After trying the Pumpkin Spice cupcakes, I enjoyed them. I personally don’t really prefer pumpkin spice but they were tasty. It was easy to make if you followed the correct instructions and ingredients. My favorite part was the cream cheese frosting, it definitely made the cupcakes, I love cream cheese. Lastly, something I would change about this recipe is the amount of ginger, the ginger made the taste very strong, much stronger than I liked. 

 

2) Chicken Pot Pie- ¼ All-purpose flour (dough), Seasonings of your choice, ¼ cup of butter, 3 cups of rotisserie chicken, 4 cups of chicken broth, Cream of chicken soup, ½ cup of whipping cream, Vegetables of choice

 

3) Stuffed Peppers-  1/2 cup uncooked rice, 2 tbsp. extra-virgin olive oil, plus more for drizzling , 1 medium onion, chopped 2 tbsp. tomato paste, 3 cloves garlic, minced 1 lb. ground beef, 1 (14.5-oz.) can diced tomatoes, 1 1/2 tsp. dried oregano, Kosher salt , Freshly ground black pepper 6 bell peppers, tops and cores removed, 1 c. shredded Monterey jack, Freshly chopped parsley, for garnish

My Grandma and I cooked the stuffed peppers and they are delicious. I think you should have multiple different flavored peppers because you will get tired of the one flower. Make sure you set your peppers out with seasoning  for a long time before cooking.   

 

4) Ghost Cake- 2 cups all purpose flour, 3/4 cup unsweetened cocoa powder, 1 tsp. Baking powder, 1 tsp kosher salt , 1 cup hot coffee, 1 cup granulated sugar, 1/2 cup packed brown sugar, 3/4 cup vegetable oil
